Jaan is the epitome of fine-dining and has been accredited to be ‘The One To Watch’ title and holds the ranking of No. 22 in the inaugural Asia’s 50 Best Restaurants. That, is quite some achievement I would say. For the uninitiated, Jaan is a modern French restaurant by Chef de Cuisine Julien Royer, who highlights and utilises the freshest ingredients of the season. The platings of each dish is an art in itself, which reflects the creativity and imagination of the Chef. Located on the 70th floor of Swissotel, the restaurant boasts one of the greatest views in Singapore too. A 5-course degustation menu for lunch is at $118 per person or $208 with wine pairing.

Amuse Bouche – To be honest, I didn’t quite catch what the staff was saying when he was introducing the amuse bouche. However, I remembered that the triangular dumplings tasted somewhat like samosas – refined ones. The portions were very obviously bite-sized and size is always important in fine-dining where sophistication is demonstrated.
Amuse Bouche [Cracker w shaved cheese] – The crackers were really light and crisp, with the shaved cheese adding a tinge of saltiness to it.
Amuse Bouche [Hummus w cracker] – I love how a personal story was incorporated into the Chef’s amuse bouche, which was meant to give diners a preview of what to come. No doubt, level of anticipation was high! Again, the crackers were paper-thin which disintegrates in the mouth beautifully with the creamy hummus.
Mushroom Tea – Poured directly from a tea presser, the mushroom tea was literally as smooth as tea. At the same time, the liquid was strongly infused with mushrooms, creating an extraordinary sensation which tricks your brain into thinking that “wow, mushroom tea leaves do exist”. The chopped pine nuts was a nice touch to the tea too.

‘Ocean’ Seafood Composition – This was a dish of raw crabmeat with cauliflower foam and breadsticks. A very delicate dish, the crabmeat was delicious and full of flavours by itself.
Jaan’s Garden [Season’s best composition, wild herbs] – This was the most unique plate of vegetables I’ve had – some of which I was encountering for the first time in fact. Though the vegetables may be rather bland (and there were lots of them to go through), the play of textures would be a focus of the dish.

55 Degree Rosemary Smoked Organic Egg [Smoked rattes, chorizo Iberico, buckwheat] – We waited really long for this dish as apparently the chef was not satisfied with the first batch of eggs, hence extra time was spent on perfecting a new batch. Well worth the wait I would say! Moreover, I was glad that the team was honest in staying true to the standards and quality of the brand and restaurant. When the egg carton arrived at our table, there was a strong scent of smoked fresh rosemary! The staff subsequently poured the egg carefully into the bowl of condiments. The egg was mind-blowing – now we know to cook our eggs at 55 degree. My only gripe was that the ham was too salty.
Atlantic Brill ‘Cochonaille’ – Faultless and I suspect I had a morsel of potato pancake – pleasant surpise!
Palette Cleanser of Mango Sobert & Meringue.
‘Choconuts’ Tastes & Textures – A genius play in textures using chocolate, this dessert was highly-raved by my family. The lava cake was incredible with a soft, chocolatey exterior, encasing smooth, melted dark chocolate.
Petit Fours [Lime & Ginger Ice Pops; Chocolate Lollipop; Jam Biscuits] – A happy sight of sweet treats to end off the meal officially! I guess you’re tired of me saying how wonderful everything was. But yes, incredible display, which is even more so in taste.
Chamomile Tea – $8 a cup, enough said.
Set lunches at Jaan are way more affordable than dinner or ala-carte. With such fresh and innovative dishes, I am really inclined to head back to find out what more they are able to offer. Since Christmas is around the corner, why not head down to Jaan to celebrate this festive season!
